- 2 Granny Smith Apples

I feel like I didn’t use the majority of produce I got in recipes these past couple weeks. I made the 3 recipes below, and the rest of it I just threw into a basic salad or just ate as-is (the pears, apples, and sweet peppers). The sweet peppers are SO good. I’ve never had these before…I just assumed they were smaller bell peppers but they’re so much more sweet and delicious. I will say that I was slightly disappointed in some of the produce quality in this box…the lemons were very soft, and one of the apples I had to throw away cause it was too bad to eat. Generally, though, everything else was good. I forgot to take photos of pretty much everything…completely slipped my mind, will try to do better for the next round!
Cheeseburger Salad
Used: Lettuce, Avocado, Onion
This was kind of a weird recipe that I’ve been wanting to try. It was surprisingly good! The dressing really makes this salad. I also purchased these really good pickles by a brand called Sucker Punch (they’re delicious and spicy!) which made it even better. I actually forgot to put tomato in this…there just seemed to be enough going on without it.
Chicken in Chipotle Sauce with Avocado Crema
Used: Avocado, Onion
This was very good, though a bit involved. I love anything involving Chipotle peppers in adobo, though I always feel a bit wasteful because I never finish a can (its in my fridge right now…ideas?). The avocado crema was good but I forgot to add in the jalapeno pepper so I think it would have been even better without it.Â
Baked Spaghetti Squash and Cheese
Used: Spaghetti Squash, Onion
Its been awhile since I’ve dealt with a spaghetti squash…they’re a bitch to cut in half! But otherwise this was pretty easy to work with and a good size too. I was surprised because usually HH sends me smaller versions of things, but this was a large squash! It was definitely enough for a family and we couldn’t finish the casserole, but it turned out delicious. 🙂
