- 1 bunch of baby spinach

I procrastinated on doing anything with rambutans until like 2 weeks later cause wtf are they?? They’re actually pretty good once I did eventually try them (kind of coconut tasting), but it was very difficult to separate the pit from the fruit flesh (parts of it kept sticking to it). And then I read online that the pits are poisonous (ahh??) so I was paranoid I had eaten some accidentally and was going to die but I’m still here so…hopefully all good. For the avocados, I just used them for avocado toast (like the millennial I am).
Eggplant Parmesean
Used: Eggplant, Garlic
You know I’m gonna make that eggplant parm again! The eggplant I got this time was a bit more banged up, but it was still super yummy just like last time. I used the same sauce recipe. Only thing I left out this time was the fresh basil (subbed dry) since I didn’t have it on hand. A coworker suggested peeling the eggplant first so next time I make this I’ll probably try that out.
Bacon Spinach Pasta
Used: Spinach, Garlic
Another repeat recipe here…sorry, probably kind of boring but I loved this recipe and wanted to make it again! Turned out as yummy as last time. I ended up using like 3 types of pasta since I was short on enough of one. I always have to add way more water than the recipe calls for, but thats mainly because I add more pasta.
Rosemary Roasted Red Potatoes
Used: Red Potatoes, Garlic
Fun story! I sliced my finger open while making these (chopping the garlic more specifically). Be careful with large sharp knives, kids! After frantically texting Steve and applying pressure to it so blood didn’t splatter everywhere, I did actually finish making this dinner. The potatoes were delish! I ended up adding thyme as well for some more flavor.
Cauliflower Potato and Leek Soup
Used: Cauliflower
Soup season has officially begun! (well…its kind of warm this week, but in theory). I’m not the biggest fan of cauliflower, so I wanted to make something where it was kind of blended into something (and blended soups are my favorite anyway). This soup sounded yummy and I had some extra bacon from the pasta meal to add as a topper. It was pretty good, albeit slightly bland, but definitely not bad. I have a lot leftover for future lunches too.
