Its been so long since I cooked since Shawn’s been away (almost a year? haha). A lot of the recipes I cook are from allrecipes.com. The one below is for one of my favorites which is a dijon-tarragon cream chicken. Heres the link to the recipe as well if you want to see ratings or customized servings etc.
Ingredients
1 tablespoon butter
1 tablespoon olive oil
4 skinless, boneless chicken breast halves
salt and pepper to taste
1/2 cup heavy cream
1 tablespoon Dijon mustard
2 teaspoons chopped fresh tarragon
Directions
1. Melt the butter and heat the oil in a skillet over medium-high heat. Season chicken with salt and pepper, and place in the skillet. Brown on both sides. Reduce heat to medium, cover, and continue cooking 15 minutes, or until chicken juices run clear. Set aside and keep warm.
2. Stir cream into the pan, scraping up brown bits. Mix in mustard and tarragon. Cook and stir 5 minutes, or until thickened. Return chicken to skillet to coat with sauce. Drizzle chicken with remaining sauce to serve.
So the event of the week would have to be my little treadmill accident on Tuesday. haha. Everything was going fine…I had just started working out…then all of a sudden my freakin ipod decides it wants to jump out of my hand and lands on the conveyor belt. So, being the genius that I am, I fall onto the moving belt knees first to rescue it. But I can’t actually grab it because, well, my knees are on a moving treadmill, and it ends up flying across the room somewhere. So then I begin the process of trying to get myself off the treadmill, which is in a rather enclosed space with a lot of crap around it so I ended up causing a a pile of CDs to come crashing down. My ipod had flown halfway across the room underneath a couch so it took awhile to find. So yea, my knees are all bruised up obviously. They look pretty hideous 🙁 I’ve been putting on neosporin and bandaids and such for the past two days and gently cleaning it with soap. They’re not going to be healed for awhile most likely. I’m glad its Fall because I probably won’t be able to wear a skirt/dress/shorts at all until several months from now. Or maybe it just looks worse than it is? I really hope so, because they still hurt when I bend my knees and the assload of band-aids is really annoying. lol. My ipod, unlike the current state of my legs, is in perfect condition. Thats what counts, right? X( lol
Gonna do a little bit of shopping after work tomorrow (badly need some items from LUSH because my skin is freaking out), then I’m going out to a friend’s birthday dinner. Should be fun! I also got my rebate card from Verizon in the mail yesterday…so thats nice to have.

I love allrecipes. I’m on there all the time. I’m forever printing recipes and then not using them though. Really need to start doing some real cooking…

That sucks about the treadmill. It’s funny how we react in a crisis sometimes. When I went skiing for the first time my friend fell in the snow so I was all alone and got scared so I decided that to stop myself I would trip myself. Not a very good idea. I almost broke my ankle that way and we had to go home because I needed to go to the hospital.
