So excited about sharing this recipe because its so incredibly easy! My parents gave me their old food processor that they never use, so I’ve been trying to find recipes that make use of it. I stumbled upon this recipe on FitSugar in an article about healthy snacks, and it sounded like the perfect one to try! I’m always trying to get more nuts (mainly almonds) into my diet but I’m just not big on the texture or flavor, but I love when they’re processed into a bar. Here’s what you need to make these basic bars (its not a whole lot!):
- 10 dried pitted dates
- 1/4 cup raisins
- 1 cup raw almonds
Mix all ingredients in a food processor until well mixed (the recipe says 2 minutes, but long enough so that the texture looks like the second picture). I had never used a food processor before so I was a little nervous and had it on low for the 2 minutes until I realized the texture looked nothing like the picture on the website (it was lacking the thick, clumpy factor). Once I put it on high for a couple minutes it was perfect! After mixed, place the fruit and nut “dough” on plastic wrap and fold the plastic wrap over it so that you can form a rectangle that is about 1/4 inch in height. Make sure it is tightly squeezed together. Then, place the block in the freezer for about in hour. When an hour is up, you should be able to unwrap and cut the bar easily.
If you cut it into 6 even pieces, they will come out to 150 calories per piece. Unless you’re going to eat them all in the next couple days, keep them in the fridge! I like to wrap mine individually to take to work with me. They’re so yummy for being so simple, and much cheaper than buying the pre-packaged ones like Larabars. You can also mix it up by using different fruit or nuts for other varieties!

I love easy recipes! I don’t think I’m brave enough to try one of these though. They just don’t look appetizing enough for me lol. But I think Winston would love them.
