I think I may change “Recipe of the Week” to just “Recipe”, since they haven’t exactly been a weekly occurrence lately. At any rate, here is a super easy recipe for my favorite food ever…salsa! I stumbled upon this on Jillian’s blog, Cornflake Dreams. Be sure to check out her original post because it has THE most adorable recipe graphic ever. 🙂
You’ll need:
- 3 tomatoes
- 1 red/purple onion
- 1 giant jalapeno
- 2 cloves of garlic
- cilantro (a lot!)
- lemon juice (lime would work too)
You can chop finely and mix all these ingredients or you can use a food processor like I did. I like my salsa to be really blended and not so chunky, but if you like chunky salsa then you can definitely just chop and serve that way or even blend it for a very short time. I’ve been chowing down on this delicious salsa every day! Its a little spicier than I thought it would be, so in the future I may remove the seeds of the jalapeno before using. The tomatoes I used were extra large (thats all they had) so I’m not sure if the measurements were right, but the great thing about this recipe (and salsa in general) is that its hard to mess it up too much! Its so simple that I can definitely see myself making (and eating) this all the time! This batch makes a lot of salsa, too, so if you’re not a salsa fiend like I am (this will probably be gone by the end of the week) then definitely freeze some of it.
